SHF 28 Ginger it up!!

Ok, so I may have been a slack food blogger for quite awhile and been remiss in my food blog event particiaption, but it was PURELY accidental I swear it! But this month I have seen references to ginger and I just knew that I could not miss another Sugar High Friday. So…. I haven’t ;) and yes it is still Sunday the 28th here in Australia ;)

I had planned on using the zimbabwe ginger coffee that my parents brought back from there 7 weeks in Africa, but I couldn’t. I am sorry mum but unlike the vanilla tea that stuff is N. A. S. T. Y. I mean really, really bad, such a pity. So I had to come up with a whole new plan. Luckily when I went shopping yesterday I remembered to buy some lovely fresh, young ginger. Since Casey and Chris all but demanded Calzones for dinner tonight all choice was tken from me and I knew what I had to do. So I made an apple and ginger calzone and it was pretty good. Casey will even have some for breakfast at work tomorrow.

The calzone was really easy to make, especially if you are already making pizza or calzones, I think the same recipe could be used as a flat pizza as well. So all you have to do is make you “normal pizza dough” and make it into a rectangle on a piece of baking paperand instead of tomato sauce I put a mixture of ricotta and natural yoghurt mixed with vanilla, cinnamon, a really big grating of fresh ginger and some honey. I then spread this mixture of the entire length of my dough square, I then layed a big pile of thinely sliced wedges of apple on one half of the dough. I then layed the topside of the dough on top and baked the calzone in a very hot (over 250C) oven on a preheated pizza stone. I made sure to flip the calzone over a couple of times to ensure that onside didn’t become soggy and both sides browned nicely. Once cooked I cut it up and gave the slices a good dredging in vanilla dusting sugar. It was then devoured whilst watching Broken Flowers, which was good but WTF I need closure!
