But I am back, I hope..
I thought I would show you an easy recipe that will have most guys (Casey very much included in this bunch) Drooling at your feet. Spicy baked chicken wings. I haven’t made this dish in while as I haven’t had a good source for organic chicken wings, that was until today (Uh Oh). For $4.50 I bought a kilo of the middle section of the chicken wing from free range organic chickens YAY! Which makes them pretty great value and just like the rest of the chicken, the succulence and tasteimproves alot plus instead of sad beat up chickens you know they had at least the option of seeing sunshine. The method is very easy, makea spicy spice blend, I used dried chilli powder, seuchuan pepper and normal pepper and salt mix this with some flour and flour the chicken wings. Evenly line the wing sections up on a rack over a baking tray and bake in a preheated oven at 200C for between 20 to 30mins (depending on actual oven temp, wing bit size and wing spacing) half way through you might want to rotate and turn them over. They will end up crunchy with a spicy flour outside. They need to be cooked enough so that the meat is tender and almost falling off and most of the fat will have dripeed into the bottom tray. I served mine with a salad and a spicymayo dip made with chargrilled chilli, chargrilled garlic, capers, dill and mustard. I hope you like them! They would be perfect for a party and people will want to know where you got them from!
