So I made him some pizza


So after yesterdays encounter with meat, we were almost saboutaged again ( I know, I know) by pizza at the pizza store. The pizza store is inside the video shop, is that nasty or what? So my plans for spinach salad with chickpeas turned into the boy begging me for pizza. Instead of letting him order a fatty meat laden pizza I made my own, with veggies and a half wholemeal pizza base baked on my pizza stones. Yum.
But the highlight was definately dessert, if you are a traditional pizza fanatic, avert your eyes, you will probably alreay been disgusted with my first efforts and I don’t think you will be able to stand seeing the next Pizza.
That’s right Sugar Plum and Blueberry, with a vanilla yoghurt sauce.

So how was it? It was good, really, really good.

Sugar Plum Pizza
enough pizza dough to make 1 round ( I made dough from aprox 1 kg flour and 600mls of water with 2 tbsp yeast for ll 3 pizzas)
Sugar plums (about 15 - 20 sliced in half, stone removed)
handful of blueberries
brown sugar
cinnamon
lime zest
vanilla
2-3 tbsp natural yoghurt
freshly grated nutmeg.
Preheat oven with pizza stones as hot as the oven goes for at least 1/2 hour (turn oven on before you start your dough).
Roll the pizza dough out into a round, sprinkle with brown sugar and cinnamon. roll up the dough and form into a ball, leve to rest for t least 15 mins (or until the gluten relaxes). Roll the dough back out into a round, I roll mine out on to baking paper. Mix 1 capful of vanilla into the yoghurt, spread over the pizza base. sprinkle brown sugar and cinnamon on top of the yoghurt. Lay the sugar plums evenly out on top, sprinkle the bluberries around. Sprinkle the lime zest and nutmeg on the top.
Slide the pizza on the baking paper onto a big flat tray(I use a huge chopping board), slide from the tray onto the pizza stones. Bake for about10-15 mins til golden around the edges.
