Deux to the veggies
I have managed to avoid all temptation today, and instead of letting myself be sabotaged I left the option up to the boy. When faced with a choice of a chickpea salad or lentil rice the boy chose the lentil rice (Which Farmgirl so kindly pointed out to me
). At least my tactic of pretending to give him a choice worked, when either option was really AOK with me. He did pick the least healthy of the two options though. I have to say that Muhjadarrah is a very, very tasty dish. I did up the options though, subsituting brown basmati for white long grain rice, using blue lentils instead of brown, adding 2 fresh bay leaves to the cooking rice/lentil mix and thyme leaves to the sauteing onions. The only word of warning is that you should make more than you need as it is really good cold. The raita of yoghurt, mint and garlic I made went very, very well with the Muhjadarrah and I would recommend it as an almost requistite accompiant.
I think that this Bannana Ice Cream could be considered a healthy veggie option
I need all the inspiration I can get! Remind me, why the freezer cell for my ice cream maker isn’t in the freezer already?
