It is that time of the week again, whenwe get to celebrate all things vegetable and antioxident rich. It is of course ARF5 aday Tuesday! YAY! Run of course by the lovely Sweetnicks :)
Chicken and blueberrie salad with peach and avacado salsa
Sorry, I know that isn’t the best picture, but I dare say it is the best dish. It is an amazingly tasty salad that had Casey wishing I had made more. Isn’t that the aim of this event? I know it sure made me happy. The flavours just seem to melt together, it has a few “asian inspired” methods and ingrediants but the flavour was fresh and zippy. You just have to make this! It might seem like a long recipe but it really isn’t.

Chicken salad with peach and avacado salsa

Salad
Cooked Coconut Lime Chicken (recipe below)
Blanched Snow peas (refreshed in cold water)
Rocket
1 punnet of blueberries
Peach and Avacado salsa(recipebelow)

Lay down a bed of rocket and snow peas. Lay the cooked chicken strips over the top. Place a mound of salsa on the top and drizzle the dressing around. Sprinkle the blueberries around the sides.

Chicken

You need aproximately 1 breast per 2 people

Marinade
1 small can of coconut milk
zest of 1 lime
1 chilli
2 garlics
5cm piece of ginger

Preheat oven to 180C
Slice the chicken into cross sections that are around 3- 4 mms thick. If your chicken is alittle thick just bashitout alittle. Place the chicken into a marinade bowl.
Place all of the Marinade ingrediants into a processor and blend. Pour over the chicken and leave to marinade for half an hour.
Place chicken slices on a piece of baking paper on a baking sheet, try to remove excess marinade. Bake for about 10 mins depending on youroven and the thickness of the slices.

Peach and Avacado Salsa
1 avacado, diced
2 peaches, diced
juice of 2 limes
equal quantity of fish sauce to lime (make sure it is good stuff, I like squid brand,)
gratedPalm sugar (can be substitued with dark brown sugar)
1 chilli minced
1 garlic minced

Mix the lime juice, fish sauce, 2 tsp palmsugar, chilli and garlic. Taste, it should be not salty and not acidic, if it is salty add alittle more lime juice, if it is acidic add alittle more fish sauce. Add the peaches and avacados, mix. Taste for sweetness, it should be fine as long as the peaches are ripe.
