Hay Hay It’s Donna Day #2 - Macaroons

The lovely Glutton Rabbit is the host of the second Hay Hay it’s Donna Hay event, after winning the first round.
I noticed, whilst reading the entry details that GluttonRabbit LOVES cute stuff, I already knew that
But, I wanted to ensure that I made my little ruby red grapefruit and lime macaroons where as cute as I could possibly make them. I have been know to like cute stuff too
esp if it is tacky LOL. I was immediately inspired by Glutton Rabbit, I would make chubby little macaroon rabbits! Yay! So that’s what I did.
The recipe was very easy to follow and I couldn’t have had a better time to make it as I had 2 egg whites and a brand new packet of dessicated coconut from a delcious dessert I made yesterday (will post about it later). I also know that they are incredibly tasty as Casey managed to eat the rest when he came back from work LOL. Thanks for such a cute event that let me “get creative with it”, I am definately going to do more decorating like this.
Ruby Red Grapefruit and lime Macaroons
2 cups desiccated coconut
1/2 cup sugar
2 egg whites
Grated rind of 1 ruby red grapefruit and 1 lime.
Preheat the oven to 180ÂșC. Place the coconut, sugar, egg whites and lime zest in a bowl and mix to combine. Roll the mixture into balls. Place on a lined baking tray, flatten slightly and cook for 10-12 minutes or until light golden. Serve with coffee. Makes 15.
To decorate
You need a packet of royal icing and some food dye. Break off small chunks of icing and mold to desired shape and stick to the macaroons. To colour the icing mix a drop of dye with theicing and shape. If the icing is too soft add some sifted pure icing sugaror leve the icing to sit for a few minutes. Get Creative, you are only limited by your imagination!
*note* I found it easiest to knead the icing on baking paper, and I only prepped as much as I needed for each piece.
