Soupy Goodness


Well I have had a headache all day and felt yucky, and due to our fun in the gong on the weekend we didn’t have much food left. Except my mum gave us a HUGE cauliflower. What is better than cauliflower soup? or any soup for that matter? Not much!
Doesn’t this soup look lovely and creamy and smooth? Well it was. It is good too with no cream or cheese! A recipe….? Well here you go!
Clare Eats Cauliflower Soup
100g speck chopped (or bacon)
1/2 bunch of celery, chopped
5 cloves of garlic, chopped
1 tbsp, butter
1 Huge cauliflower, chopped.
Water
Milk (1% Fat)
1 handful of Pinenuts
4 slices of bread, cut into cubes
salt, pepper and freshly grated nutmeg to taste
Fry off speck, celery and garlic in butter til lightly golden and soft. Add chopped cauliflower and stir. Add water until it comes up to 3/4 of the depth of the ingrediants in the pot. Add a little salt. Simmer until the cauliflower is tender, add 1 cup aprox of milk and blend til smooth (preferably with a stick blender). Taste and add salt nutmeg and pepper to taste. Put the pot back on the stove to heat through. Fry off pinenuts and bread til toasted. To serve place soup in bowls and sprinkle on pine nuts and bread and add a ring of extra virgin olive oil. EASY!
