Celebrating with family

Well we went to Wollongong on Saturday to celebrate my sis’s new job! Which seems to be going really well for her, I am soo happy. It was also a chance to show off my new home roasted coffee beans to my parents :) . The showing off of beans went really well.. They couldn’t believe how smooth and not bitter they were.

My mum was supposed to be their for dinner, but didn’t check her roster well enough! So dad and I were left to make dinner, Roast lamb… Well that’s very easy to make, except that I have had little experience with their beautiful stove, as they bought it AFTER I moved out. Dad pulled out the gorgeous looking mushrooms and told me I was to bake them…. hmm I LOVE mushrooms and the taste they have when they are baked but the juice always seems to run everywhere. So I thought, Stuffed mushrooms would be v.nice… So I toasted some fresh Italian bread with some walnuts and pine nuts in the oven. Chopped a few garlic cloves with some fresh parsley, thyme and oregano. Placed it all in the blender with heaps of freshly ground black pepper and whizzed to fine bread crumbs..
Put it into a bowl, grated some pecorino in and added a whole egg. I then mixed til combined and spooned mounds into mushrooms with the stalks removed. Baked for the last 15 ins with the roast on 180 with the fan.

My father tried to tell me I made too much… but I didn’t just the perfect amount. The filling went crunchy on top and soaked up the mushroom juice perfectly. Sorry about the meausrements… I never record them when I make a recipe by feel. My sisters partner told me that “Your mushrooms are fantastic”, its nice to get some praise.
